This salad is easy to make and a guaranteed family favourite; healthy and colourful.
Prep Time: 10 minutes / Serves: 4
1 head of Romaine lettuce chopped
2 cups baby spinach
2 beets, roasted and sliced about ¼ inch
1 red onion, sliced in thin rings
2 oranges, peeled and sliced
¼ cup toasted pumpkin seeds
½ cup chopped cilantro
¼ cup vegetable oil
1 ½ Tbsp concentrated pomegranate juice
½ tsp salt
STEP 1: Place all ingredients, except pumpkin seeds and cilantro in a shallow salad bowl.
STEP 2: Whisk dressing ingredients together, pour over salad and gently toss.
STEP 3: Add pumpkin seeds and cilantro.
STEP 4: Serve and Enjoy!
